2017 Cabernet Sauvignon
This full bodied wine displays a complex blend of black fruits and cassis flavors complemented by ripe tannins and a full round lingering finish. All AmRhein's wines are made from 100% estate grown grapes cultivated in our three vineyard locations in the Blue Ridge Mountains of Virginia since 1995.
Cabernet Sauvignon is usually the 1st wine to come to mind when you think of dry red wine. It is grown in almost every major wine making region in the world, and does very well here in Virginia. 2017 was a good year which started off wet but became hot and dry right as the fruit set and stayed that way through harvest.
Viticulture and Vineyard Site
We grow our Cabernet on a south facing slope in our Botetourt County Vineyard. This grape really must be grown in very well drained soils, and that is why we grow it where we do.
This grape is very thick skinned which is responsible for bold tannins and rich color. We ferment this wine using extended maceration, which means we leave the wine must on the grape skins for 25 days. This brings out the deep color and intense flavors. After the extended maceration it was racked to French oak barrels for 18 months prior to bottling.
Tasting Notes and Food Pairing
Bold dark fruit flavors burst forth on the palate with hints of cassis followed by a lingering finish with a smooth tannin structure. This cabernet is the perfect complement to a grilled ribeye, NY strip, or fillet mignon. It is also a great compliment to a nice cigar.
